Millionaire's shortbread recipe from Belfast chef is like a gourmet Twix bar

This is a fun and tasty recipe you can even get the kids involved with!

Banana bread was so lockdown 2020 so if you're looking for something fun to bake at home and even get the kids involved then we have just the recipe.


The brilliant Belfast Undercover chef has shared with us his top traybake recipe, Millionaire's Shortbread.


This family favourite is sure to go down a storm at home and according to the popular Instagram chef, it tastes like 'a gourmet Twix bar'.


We can't argue with that!

Here's what you'll need

Ingredients:


Shortbread

250g plain flour

80g caster sugar


170g softened butter

Caramel:

100g butter


100g muscovado sugar

1 can of condensed milk

Topping:


110g milk chocolate

110g Daim bar

Recipe


  1. Heat the oven to 180C. Lightly grease and line a 20cm square or rectangular baking tin.
  2. To make the shortbread, mix 250g plain flour and 80g caster sugar in a bowl Rub in 175g softened butter until the mixture resembles fine breadcrumbs.
  3. Knead the mixture together until it forms a dough, then press into the base of the prepared tin. (Use a spoon to get into the edges and smooth the base out)
  4. Prick the shortbread lightly with a fork and bake for 20 minutes or until firm to the touch and very lightly browned. Leave to cool in the tin.
  5. Now on to the caramel, place 100g butter or margarine, 100g muscovado sugar and the can of condensed milk in a pan and heat gently until the sugar has dissolved. Continually stir with a spatula to make sure no sugar sticks to the bottom of the pan.
  6. Turn up the heat to medium high, stirring all the time, and bring to the boil, then lower the heat back to low and stirring continuously, for about 5-10 minutes or until the mixture has thickened slightly. Pour over the shortbread and leave to cool.
  7. For the chocolate topping, melt both chocolate bars slowly in a bowl over a pan of hot water. Pour over the cold caramel and leave to set.
  8. Melt 50g of white chocolate in a bowl and pour over the milk chocolate, use a cocktail stick to create a design of your choice.
  9. Use a hot knife to cut once set and enjoy!
